Today I got a envelope from the USCIS (U.S. Citizenship and Immigration Services).
It has an document about my green card.
It says, "Welcome to The United States of America." to notify that my application for my permanent residence has been approved.
And my green card (New permanent residence card) will send my within in next 3 weeks.
We had an interview about my green card on 5th November to get my green card.
And the interview was very good impression and we felt the final process at that time.
Finally today I got the notice that my permanent residence has approved and David & I were very happy to know that.
Before the end of this year, I will get my green card in my hand hopefully.
It took a very long process and we was very waiting for my getting green card for a long time.
And finally we got a happy news from USCIS today.
Just we are very very happy to get this notice and I am very looking forward to getting my green card soon...
And I am very thankful for David's friend to support us for this process...A LOT!
Today I cooked a potato soup for dinner.
Organic potatoes have nice taste itself and I like the simple way of cooking.
Usually I cut an organic potato and put on the pinch of salt and then I bake it in the oven for while.
Only baking potato is very delicious and it is very healthy to eat.
But today, it is very cold outside and I decided to make a soup.
I made a base of soup by "Konbu" (Japanese dried seaweed) and I boiled with an organic potato, onion, celery with garlic & ginger.
I boiled them until all vegetable become soft and I mixed well by mixer to potage.
Just a little bit, I added an organic pepper and cayenne peeper for seasoning.
Because the potage of potato became very sweet so I feel to need another spicy taste for it.
And the potato potage became a very nice taste and I am very happy.
Potato is not good to eat too much because the character of it can make a body cool down.
But David likes potatoes so much so I cook it for him different kinds of meals somehow.
Anyway, I could cook a nice potato soup today so I hope David will enjoy the taste later.
Day by day, it is getting cooler and cooler and the window of a car is frozen outside in the early morning recently.
So real winter season arrived at Seattle already, so I want to cook for us to make our bodies warm up every day.
I cooked a simple soup for dinner yesterday.
I made a base of soup by "Konbu" (Japanese dried seaweed) and I boiled organic onion, carrot, potato and celery in it with mild heart slowly.
I added slice of garlic & ginger in it and I waited until all vegetables became soft.
Only a pinch of salt can make all vegetables' sweetness pull out naturally.
And I seasoned for this soup with Syoyu Koji (soy source with fermented organic rice) a little.
This soup looked like a pot-au-feu and the taste of soup was very delicious.
Organic vegetables don't need so much seasoning & complicated way of cooking at all.
Because all organic vegetables has enough taste of themselves.
So just baking, steaming or boiling them can taste very delicious.
Last night was very cold outside and David really liked the simply soup taste very much.
And I was very happy to look at his happy smile with my cooking mealas.
I made a pumpkin pie for Thanksgiving day and it was very big.
So we need to eat the dessert every day to finish it for a while...
But it was very delicious and we could enjoy it together.
Last night, David cooked his special feast for dinner on Thanksgiving day.
He bought a wild king salmon and big lobster instead of turkey.
I cooked already pumpkin pie for dessert and some salads to let David cook by himself freely.
I waited and waited for more than 1 and half hour of his cooking.
I thought that his cooking is just baking for salmon & lobster but his cooking was so long for me.
He is not always cooking so he seemed to need to cook for a while.
But he did his best for our new style of Thanksgiving feast and it was too big for me.
For only 2 of us, he cooked 1 big wild king salmon at a time...but he said. "This salmon is the smallest one in the supermarket."
And I usually don't eat fish because I am vegetarian based on "Macrobiotics".
So big seafood dinner was too much for me.
I admired David's wonderful effort to cook for us but we felt so heavy in each stomach after dinner.
Out bodies is not used to eat animal product even it was rare occasion.
We realized how our bodies is used to eat organic vegetable and fruits now.
But we really enjoyed having a special feast of David' chef special and we learn how to cook our feast on Thanksgiving day next year.
We leaned to adjust our normal vegetarian life and to enjoy sometimes for special occasion each other by this feast last night.
And my pumpkin pie was not good for me because organic squash was not sweet at all less than Japanese Kabocha squash which I know.
But I used organic maple syrup and organic peanuts butter to arrange the taste for sweetness & creaminess.
I used organic ingredients for pie crust and pumpkin paste but I didn't satisfy it at all.
But David said to me. "It is delicious for me, don't worry!", so I really appreciate with his kindness.
Today we need to adjust our body condition to eat Detox foods with simply taste after big feast...
To eat unusual foods needs to adjust our daily vegetarian meals anyway.
Today is "Thanksgiving" day in the U.S.A.
We were invited by David's brother to get together to eat Thanksgiving feast but it is too late to coming back home tonight for his tomorrow's work.
Most people can get holidays for tomorrow after Thanksgiving but David can't.
He has to wake up around 6:00 a.m. tomorrow so tonight's dinner was too far to come back to home after wonderful feast for dinner.
So we decided to be together at home to create a new our own tradition for Thanksgiving today.
We discussed it last week so we woke up early this morning.
David wanted to go a nice café, so I found this organic cafe "Herkimer Coffee to have a coffee time.
Many people were there to get a coffee and many long lines kept all the time during our coffee time.
Today is a big holiday to the American and most people looked so happy to enjoy today's holiday with family.
David really liked the taste of coffee at this cafe and I was so happy to see his happy smile.
For me, coffee is not so familiar to drink every day so just I try to sip his coffee.
In Seattle, many coffee shop & cafe are around here and there.
And all cafe has an original taste & fastidiousness (KODAWARI) about their coffee and I enjoy the difference of each cafe.
We went to Green lake after coffee time to take a walk and many people were walking & running there, too.
Everyone seemed to be happy with smile today and we had a nice walk together.
On Thanksgiving day, turkey is the most popular to eat as a feast.
But I am vegetarian and I don't want to eat it even today is a special holiday.
So David & I discussed to adjust our new tradition to eat for dinner.
David wanted to keep it secret what to eat tonight.
So I just made "Pumpkin pie" & "Mushed potato" of a vegetarian style which is based on "Macrobiotic". with all organic ingredients.
I hope he will like it when he ate tonight.
And just I wonder what David will cook for us as a main meal for us.
For David, Thanksgiving is very special day so I want him to enjoy his cooking later...
To get together with family is precious thing but to create our new tradition as a family is important for us...
I am not good at party or old tradition at all so just I want to create our new style with compromise & adjustment each other.
I found 2 lovely germs in the pot.
I grow some herbs up in some pots and I buried organic apple & pear seeds about a week ago.
I really like to eat organic apple & pear and I wonder these seeds can grow up or not.
So I just tried to buried in the pot beside of herbs.
And lovely baby germs came out the soil and I am very happy to find it.
I didn't expect the germination at all because it is cold very much recently.
So maybe the germination is impossible for apple & pear.
But they could germinate and these germs are so cute and pretty.
I told David about these germs and he looked very happy to find them in the pot.
I am not sure of their growth from now on but I try to care of them every day to grow up more every day...
Today, David & I went to go shopping together.
And one lady suddenly talked to me, "Your clothes are so wonderful!"
I was so surprised at her admiration about my clothes, so just I said to her, "Thank you very much."
Then we went to go shopping to another store, and suddenly the old lady talked to me, "Your skirt is very lovely! Where did you get this??"
This is the second time of stranger's admiration to my clothes.
So I said, "Thank you, I bought this in Japan."
At Edmonds city, strangers are very friendly usually and I was talked by them so often.
Also today I wore my favorite pants which looks like skirt with much bulge.
And this pants has a another layer inside and it is very warm.
I usually put on my Japanese clothes and it seems to be very rare in the U.S.A.
So sometimes I felt somebody's fixing eyes on my clothes from the bottom to the top.
But I don't care what others think of my clothes at all.
Because I can feel nice when I put on my favorite style always.
David likes my style of clothes and I am happy to know that.
But anyway I got strangers' admiration for my clothes 2 times a day, so just I was very surprised.
The forth of Thursday in November is "Thanksgiving Day".
So in this week, much of "Holiday mood" in the U.S.A. all the time.
For American, "Thanksgiving" is very special holiday for everyone.
And usually, they see each family together and enjoy special feast.
Like "New Year (Osyogatu)" in Japan, "Thanksgiving" is very special holiday.
For me, I am not used to enjoy this "Thanksgiving" holiday yet, but the atmosphere in the U.S.A is now different from usual.
David really miss the taste of "Turkey" for Thanksgiving feast and I am not sure of the taste at all.
Just I feel that many turkeys will be eaten on Thanksgiving day all over the U.S.A. so I feel so sorry for all of them.
But I want him to enjoy the taste only on that day because he usually adjust to my vegetarian meals mostly.
So I don't try not to feel bad for his turkey as possible...
When I lived in Japan, normally I usually ate baked mushroom.
But after I came to Seattle in U.S.A., I saw sometimes raw mushroom in salad.
For me, to eat raw mushroom is not used to eat but David likes to eat raw mushroom.
I tried to eat organic raw mushroom in salad and it was nice texture and delicious!
It was the first discover to eat raw mushroom.
Organic mushroom is very fresh and the crispy!!
Now I can eat it more raw than baked.
Organic raw mushroom is like a snack for me.
And recently, new big supermarket is open.
We found a nice organic mushroom there and it is the cheapest!!
So I can eat it easily and I really like it!
I cooked "Quinoa" salad for dinner last night.
Quinoa is very healthy grains and it is very easy to cook.
David really liked the taste of Quinoa salad last night, so he asked me to cook it today again.
Of course, I can cook it again but I wanted to change the ingredients a little.
To boil Quinoa with water and I added a pinch of last with it.
And until the hot water will disappear, I boiled them softly.
I chopped organic celery, zucchini, tomato, mushroom and baked onion with Quinoa.
And I seasoned it with organic soy source, valsamic vinegar and lime juice.
I added dried WAKAME (seaweed) to the Quinoa salad to change the ingerdients today.
He really likes to eat salad very much so I try to arrange the taste day by day.
Even in winter season, he wants to eat organic salad every day.
In winter season, it is not good to eat cold & row food because it makes our bodies cool.
So I usually cook warm dishes as much as possible plus his favorite salad for David.
