Brown rice bread
David likes to eat bread so much.

But he has an allergy, so eat gluten of wheat is not good for his body.


Sometimes he wants to eat bread so much, so I made like a bread texture with organic brown rice flour.

Today, I made some bread with organic sweet potato, onion and garlic for him.


He also likes sweet potato, so he will enjoy my handmade bread,

I think that the he loves to eat the texture of bread like sticky and chewy.


So I can arrange his favorite texture to use organic brown rice for his bread.

Sometimes I use organic corn starch, tapioca starch or arrow root powder to make chewy texture with brown rice flour.


To adjust David's favorite way of eating is my challenge to let him enjoy his meal.

Anyway, I hope that he will enjoy my handmade brown rice bread tonight as his dinner with his lovely smile...^^

Handmade Miso
Yesterday, I made handmade Miso (fermented soy beans paste) again.

Last February, I made handmade Miso for the first time by myself in Seattle, and it became delicious Miso.


The best timing to make Miso is the coldest season, so usually most people started to make handmade Miso in Feberuary in Japan.

But I felt that these days are very cold in Seattle, so I made it yesterday.


Last week, we got nice organic soy beans already so I started to soak in some water over last night.

And yesterday, I started to boil in a pan and it became soft and then I mushed them well.


During boiling organic soy beans, I got ready KOJI (molted organic brown rice) and salt in a bowl.

After boiled soy beans paste became cold, I mixed them together and put in a container.


I pushed the ingredients into the container to remove air and it will be nice organic Miso after more than 6 month.

Also we have delicious organic Mung Dal at home, so I can make Mung Dal Miso, too.


Any kinds of beans can be nice Miso like normal way of making Miso, so I wonder if I make different type of organic beans in a new year.

Anyway, I am very looking forward to using my handmade Miso after 6 months.


To make handmade Miso is very easy and simple and it will be wonderful seasoning for our meals, for sure.

David and I really love the taste of organic Miso, so we eat it every day.


Today is the final 3rd day of this year, I cannot believe that this year will end soon.

I hope that David and I will enjoy the rest of this year to start New Year with hopeful mind each other.^^

Delicious paste
Yesterday, David got an organic avocado from his friend so I made nice paste for him today.

I cut organic onion and added organic mustard, white vinegar, lemon juice and white Miso(sweet fermented soy beans paste) as seasonings and mixed them well.

After I cut the avocado, I mushed them well and I mixed all of them.


It became nice avocado paste and it became nice combination with all organic vegetables.

Today I mixed them with organic baked carrot and sweet potato.


I hope that David will loves it when he eat at our dinner time.

Also I want to arrange the paste for tomorrow with other vegetables.


This avocado paste is better to use as soon as possible after I made it.

Because avocado can change the color after it is cut, so the outlook will be worse if I kept it so long days.


Anyway, David really loves to eat organic avocado and he can eat whole an avocado in a day.

But it is too much fat for him, so I can use his meals my handmade avocado paste as proper portion to think his health.^^

Onion Miso
I made "Onion Miso" for our meal yesterday.

It is very easy and simple but it is very delicious saurce to eat.


At first, I chopped organic onion and leeks and I put all of them into a pan.

And I boiled them with organic garlic and ginger with hot chill for a while.


I added some organic Miso (fermented soy beans paste) and olive oil (or sesame oil is O.K.) and boiled all ingredients until onion became soft and sweet.

It became nice flavor with sweetness of onion & leeks and salty taste of Miso.


This "Onion Miso" is very good for all organic vegetables and brown rice.

David and I really love to eat this sauce and I enjoyed cooking it.


Organic onions & leeks are so delicious that they can be so nice taste, anyway.

To cook organic vegetables is my pleasure and fun every day.^^

Vegetarian cheese
Today, it is raining in this morning but it will not so heavy rainy day today.

But it is cold, I can feel...so I decided to cook "Vegetarian gratin" for David's dinner to let his body warm.


I had to make "Vegetarian cheese" to put on organic brown rice and vegetables.

I put on some kind of organic vegetables in the bottom of the rice, too.

To mix all of nice vegetables will let nice mixture of the taste of gratin later.


On the top of the gratin, I started to make "Vegetarian cheese".

I used organic Mochi (sticky rice cake which my Mom made for us in Japan) as a sticky texture of Vegetarian cheese.


I put some Mochi in a pan and I added some water to boil all of them.

And then, all Mochi became melt in a pan like a sticky source.


I already chopped some organic sweet onion and boiled in another pan with a little salt and garlic until all onion became soft and sweet.

And I mixed Mochi source and onion and I added organic white Miso (fermented sweet soy bean paste), mustard, a raw garlic, white vinegar and tahini ( white sesame paste) as seasonings.

I mixed them so well that my original "Vegetarian cheese" made easily and simply.


Later, I will bake this gratin in a oven and the Vegetarian cheese will be baked on the top and it will looks like baked cheese.

I hope that David will like it when he eat it at our dinner time later...^^


David really loves to eat cheese but these days we don't eat REAL cheese.

So I want him to enjoy this "Vegetarian cheese" of my original gratin instead of real cheese.

Surprise rice
Yesterday, I cooked special organic rice for David's dinner.

We enjoyed eating wild scallops on Thanksgiving holiday last week, but I kept some of them to eat later in a freezer.


And I soaked organic brown rice for 1 night and I cooked it in a pan yesterday.

I add some organic carrot, onion and garlic after I chopped all of them.


I put all of them into a rice with a little Konbu (Japanese dried seaweed) powder and salt as seasoning.

And I baked all of them in a pan for a while and I added some chopped wild scallops into it after brown rice became soft/


The scallops gave the rice a nice flavor and it became nice meal for David.

Just before he started to eat it, I added organic olive oil and fresh lemon juice on the rice.


It became nice "Piraf" and David noticed the scallops after he smelled of it.

David smiled so lovely that he looked enjoying it with fun, and so did I.


Usually I don't eat sea foods but sometimes I want to enjoy it with David for a fun.

Except full moon week, I want to enjoy my meals with David, because I can adjust my body with my daily diet, anyway...^^

Green peas' hummus
I checked "Green peas' hummus" in the internet of vegetarian recipe before.

Normal Hummus is made by chick peas but this recipe is made by green peas.


So this hummus is not white color but green one.

I put chopped organic 1 garlic, onion and boiled green peas into a container and I added organic mustard, white sesame paste and a little white vinegar as seasoning.

And just I blend it well and it became nice green color of Green peas' hummus.


This recipe is very simple and easy to make and it is beautiful and vivid color of green peas.

David and I really love to eat this green pea's hummus and I can mix many different kinds of organic vegetables for our dishes.


Different menu and new idea of my cooking can make our dinner time enjoy eating together.

Only I eat 1 meal a day usually, so I want to cherish this time to cook and eat for us as special every day.^^

David's cooking
Yesterday, David cooked wild scallops for Thanksgiving feast of our dinner.

I made some vegetable meals for us as special dish and main one is David's scallops.


He checked some recipes in the internet yesterday morning already.

We got nice wild scallops the day before Thanksgiving day and he tried to cook as simple as possible.


Because wild scallops can eat raw like "Japanese SASIMI" and they are so fresh and delicious without seasoning.

So David wanted to try cooking as simple as possible to taste nice flavor of wild scallops.


I let David to cook as he wanted so just I was waiting for his dish.

He got ready all seasonings (salt, pepper, organic lemon, garlic and olive oil) in front of him and he started to put all scallops on the cutting board.

And he put salt and pepper onto all scallops as seasonings.


He started to bake in a pan which has organic olive oil and sliced garlic petals inside.

After olive oil became hot, he put on some scallops gently and carefully.


His cooking is very slow and careful and the style of his cooking is so wonderful that I cannot wait to taste it with David.

And after he baked all scallops, he put them on our plates and squeezed organic lemon juice.


His meals was perfect texture and so delicious and we really enjoy eating it together.

I didn't need to eat so many scallops that I wanted David to enjoy eating it as a feast of Thanksgiving holiday.

But he tried to let me eat more than I thought, because he wanted to share with his delicious meals.


Before his cooking, we went to walk our favorite park near our home and we really had nice time together.

Our Thanksgiving holiday was so perfect for us that we could have wonderful time together, anyway....

I am very thankful his love and kindness and my gratitude is not only Thanksgiving holiday but also his daily love for me...^^

Fun for dinner
Last night, I made "MONJYA-YAKI" (Japanese savoury pancake with various fillings, thinner than Okonomiyaki) by my original recipe for our dinner.

It is very easy to make and fun for our dinner time.


I chopped organic onion, cabbage, carrot and MOCHI (Japanese sticky rice cake) and I added Japanese base of soup and chia seed in a bowl.

Also, I put on Konbu (dried seaweed powder), brown rice powder and Japanese arrowroot powder and mixed all of ingredients well.


I put it onto a pan and baked it in a oven for a while.

And I put on my original source (soy source, ginger, garlic, sesame oil) as a seasoning with seaweed powder.


My original Monjya-yaki is very easy to eat it by small spatula little by little.

Mochi (Japanese sticky rice cake) is very sticky and it is easy to be firm when it becomes cold.

So after I baked Monjya-yaki, we need to eat as soon as possible while it is hot.


Anyway, David really loves to eat it with me and we really love to eat Monjya-yaki together.

So I will make it for us again soon...it is easy and simple to make but it is so fun for us to eat together. ^^

Sweet potato soup
These days, organic sweet potatoes started to sell at many supermarket.

David really love to eat organic sweet potato and I baked it for his lunch every day.


It is Japanese style "YAKI IMO" (baked sweet potato) and it takes some time to bake it in a oven.

After I baked organic sweet potato, it became so sweet and creamy texture with natural sweetness itself.


Today, I made sweet potato soup for David's dinner for the first time.

I used organic onion, celery and tomato with sweet potato to make my original soup.


And I put on organic garlic, onion, dried basil leaves, cayenne pepper, my handmade Miso (fermented soy beans paste) and black pepper as seasonings into a pan.

It became nice sweet and a little spicy soup and I hope that David will like the taste.


David likes my original soup so much, so I want to keep cooking it for him every day.

This week and next week, he will be busy of work for Thanksgiving holidays, so I want to support him by my cooking with love from inside of his body.^^
